Joomla 6 upgrade: which PHP version should the host run?

Our host offers PHP 8.1, 8.2 and 8.3. Which one is safest for a Joomla 6 site with a few older extensions?

Thanks! Two of our extensions only list Joomla 5. Should we wait for updates, or is there a way to test them first?

Joomla 6 needs PHP 8.3 or newer, so 8.3 it is. Check each older extension's page for Joomla 6 support before you switch.
